Limau Purut for Cooking

Daun limau purut, or kaffir lime leaves, is a common ingredient in Malaysian cooking.  The bush can be grown quite easily in the tropics and my DW has two in our yard.  The leaves have a lime flavour and can be used in place of lemon peel.  I have already highlighted its use in one dish -Bombay Chicken- that was posted earlier and also photos of the fruit here.

The rind of the Kaffir lime (Citrus hystrix) is also used in Thai and Laotian cooking, and the juice used in some types of medicine.
